1 tbls margarine
2 medium white onions, halved and thinly sliced
1 tsp sugar
1 tsp kosher salt
1/4 cup balsamic vinegar
3/4 lb uncooked penne
1 large clove garlic, minced
3/4 cup dry white wine
5 plum tomatoes, seeded and chopped
4 cups spinach, stemmed and thinly sliced
2 tbls sun dried tomatoes, diced
1 tbsp fresh basil, chopped
1/3 cup Parmesan cheese, grated
1/4 cup soft goat cheese, crumbled


How Do I Make Carmalelized Onion and Goat Cheese Pasta?

Here is how you make Carmalelized Onion and Goat Cheese Pasta:

In a large skillet, heat 1 tbls of olive oil and all of margarine over medium heat. Add onions, sugar and 1/2 tsp of salt. Saute for 10-15 minutes until dark golden brown. Turn heat to high and add balsamic vinegar. Cook until all liquid has evaporated, approx. 2 minutes. Remove from head and set aside.Cook penne in boiling water until just done. Drain and set aside.In a large skillet, heat remaining olive oil over medium heat and add garlic. Cook for 30 seconds, or until garlic becomes fragrant. Turn heat to high and add wine. Reduce for 3 minutes. Add onions, penne, tomatoes, spinach, sun dried tomatoes, basil, remaining salt and pepper to taste. Cook for 2 more minutes.Remove from heat and stir in Parmesan cheese.
