10 medium stalks asparagus
5 oz goat cheese
1/2 cup diced tomato with green chile
6 oz whole grain penne (I use Ronzoni Healthy Harvest)
1 tsp extra virgin olive oil
1 tsp garlic powder
2 tbsp butter
1 cup reduced sodium chicken broth
4 heaping tbsp light sour cream
dash salt, black pepper
pinch dried basil

Here is how you make C.A.P. in a Goat Cheese Cream Sauce:

Prep:Dice chicken and cook all the way through.Blanch asparagus for about 1 minute and then set in ice water.Mix diced tomatoes w/green chiles into goat cheese.Cook:Cook pasta to desired tenderness. While pasta is cooking, add oil and asparagus to hot skillet. Cook on medium heat for 5 minutes. Add garlic powder and stir. Add butter, chicken broth, sour cream and goatcheese mixture with salt, black pepper and basil. Stir and heat over medium/low flame until it thickens up. Strain pasta. Add meat and pasta to sauce. Heat and serve.Serving Size:?Makes about 4 2-cup servings
