12 oz package Wonton Wrappers
1 package of frozen spinach (thawed and drained)
1 cup 1% cottage cheese
1 cup part skim milk Mozzarella Cheese
1/2 cup grated Parmesean Cheese
1 tbs EVOO
1/2 cup minced onion
2 cloves of garlic, minced

Tomato Basil Sauce:
2-28 oz can crushed tomatoes
1 medium onion, chopped
6 cloves of garlic, minced
4 tsp dried basil
Salt and Pepper to taste

Here is how you make Spinach and Cheese Ravioli with Tomato Basil Sauce:

For Ravioli Filling:Begin by sauteeing minced garlic and onion in EVOO. Meanwhile, drain liquid off of cottage cheese and then mash with a fork or put in a food processor. If using the processor, add to it shredded mozerella cheese and parmesean cheese. Pulse until everything is combined. Add cheeses to a mixing bowl. Add thawed, drained spinach and garlic and onions. MIx well. Add 1 tbs of mixture to each wonton wrapper and then cover with another wonton (tip: use water to wet edges of ravioli and then smash edges with a fork to seal). Drop Ravioli into boiling water and cook for 3-5 minutes. To make the sauce:Begin by sauteeing garlic and onion in EVOO. Once veggies are translucent, add the crushed tomatoes, basil, Salt and Pepper. Simmer on medium low for 15 minutes. Combine sauce and Ravioli.
