2 TB EVOO
1+ lbs. cubed chicken breast
1 small diced onion
1 clove garlic, minced
1 can diced tomatoes, no salt added, WITH juice
1 cup shredded mozzarella
.25 cup chopped flat leaf italian parsley
.25 tsp kosher salt
.25 tsp freshly ground black pepper
.25 cup bread crumbs
.25 cup grated Parmesan
1 TB butter, plus extra for greasing the baking dish


How Do I Make Italian Baked Chicken and Millet?

Here is how you make Italian Baked Chicken and Millet:

Preheat oven to 400.Bring 3 cups salted water (or chicken broth) to boil over high. Add millet, then cover and reduce heat. Simmer for 20-30 minutes. Drain and place in large mixing bowl.Meanwhile, heat EVOO over medium heat. Add chicken and cook 3 minutes. Add onions, cook until soft. Add garlic & cook 1 minute. Put the mixture into the mixing bowl w/ the millet. Add tomatoes, mozzarella, parsley, S&P. Stir to combine. Place mixture into buttered casserole dish. In a small bowl, melt 1 TB butter, add bread crumbs and parmesan, and mix. Sprinkle mixture over top of casserole. Bake until top is golden brown, about 20-30 minutes.
