4 boneless skinless chicken breast halves about 1 1/2 pounds
1/2 teaspoon salt
1/4 tsp pepper
1/4 cup shredded mozzarella cheese, 1 oz
1/4 cup shredded provolone cheesse, 1 oz
1/4 cup shredded asiago cheese, 1 oz
3 tablespoon chopped, drained, oil packed sun-dried tomatoes
2 tbsp chopped fresh parsley
1/2 tsp oregano, dried
10 ounce baby portobello ( crimini) mushrooms, sliced
3/4 cvup low sodium chicken broth
1/3 cup marsala wine
1 tsp all purpose flour
1 tablespoon butter


How Do I Make Cheesy Chicken Marsala?

Here is how you make Cheesy Chicken Marsala:

Preheat oven to 375 degrees. Place each chicken piece between two sheets of wax paper. Pound each piece of chicken with flat side of meat mallet until 3/4 of inch thick.Sprinkle chicken with salt and pepper and place on baking sheet and bake for 15 minutes. Turn over and continue 10 additional minutes. While baking, combine cheeses, tomatoes, parsley and oregano. Remove chicken from oven. Sprinkle each piece with 1/4 of the cheese mixture, then return to oven until cheese is melted and chicken is no longer pink in center. Whle chicken is cooking, make sauce in a large nonstick skillet, heat oil or spray with non stick spray and add mushrooms stirring until soft. Whisk broth, wine and flour together, and pour into skillet. Bring to boil, cook, stirring until thickened, approximately 4-5 minutes. Remove from heat add butter.
