1. Chop/slice the onions and bell peppers and begin to sautee with spray oil in a 12" skillet. (If using frozen, there is NO need to thaw.) When about half of the onions have begun to brown, add the chicken pieces, garlic, and spices. Sautee for about 2-3 minutes, or until most of the chicken pieces have begun to turn white.2. Add the diced tomatoes and tomato sauce, bring to a simmer, and cook uncovered on low for about 20 minutes, scraping bottom occasionally, or until the sauce has thickened and the chicken is done.
