Here is how you make Crockpot Chicken Cacciatore:

Toss tomatoes, chicken breasts (I like the thin-cut breasts), baby carrots, celery, wine (my favorite is Riunite Lambrusco, the slight sweetness balances the acidity and bitterness of the garlic and tomatoes), chicken stock, and seasonings into crockpot. Cook on high for approximately 2 hours, stirring occasionally, or until chicken is cooked through. Remove chicken from crockpot and set aside. In separate pan, boil water for noodles (I like bow-tie for this dish) and cook to your desired consistency. While noodles cook, add tomato sauce and paste to crockpot, stirring to integrate, and shred or finely chop chicken breasts.For a thicker sauce, add a ladle or two of pasta cooking water to crockpot before draining noodles. Add drained noodles and chicken back to crockpot, stir to evenly coat noodles, and let cook on high just long enough to thicken sauce and get everything thoroughly heated. Serve hot and enjoy!
