1 garlic clove, minced
2 tablespoons minced shallot (1 medium)
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 cup low-sodium chicken stock
2 tablespoons skim milk
2 tablespoons fat-free half and half
1 1/2 tablespoons plus 1/2 tablespoon grated Parmesan cheese
1 cup steamed spinach (frozen or fresh)

Here is how you make Joy Bauer's Chicken Florentine:

Preheat oven to 350. Cover 8-inch fry pan with cooking spray and heat over medium. Season the chicken breast with salt and pepper on both sides. place the chicken breast in a pan and cook for approxiately 5 minutes (until lightly browned); flip the chicken and cook for another 3 to 5 minutes. Remove from the pan and place on a small baking sheet. Place in preheated oven for approximately 8 to 10 minutes to finish cooking. With fry still on heat, spray with additional cooking spray, then add the garlic, shallot, basil and oregano. Cook until soft, add the chicken stock, and reduce to 1 tablespoon (this will not take very long, so watch the pan). Add the milk, half and half, salt and pepper. Let simmer for 5 to 7 mnutes, take off heat and add 1 1/2 tablespoon Parmesan cheese. Remove the chicken breast from the oven, slice across the grain to make 4 to 5 thick slices. On a serving plate, pour half of the Florentine sauce over the hot spinach.
