I lb. ground chicken or turkey breast
2 14.5 oz cans of diced tomatoes, low salt if possible
1/2 cup chopped fresh basil
2 cloves garlic, or to taste.
1 small onion, diced
pinch or two of salt

Prepare spaghetti squash: Carefully cut in half length-wise. Scrape seeds out of cavity. Spray baking pan with vegetable spray, put squash on pan rind side up. Bake at 375 for 35-45 min. Or microwave on high for 6-8 minutes. For the sauce:Cook and crumble ground chicken. Remove from pan. Put pan back on med. high heat, add canola oil. Saute onion 6-8 minutes, or until translucent. Add garlic, saute until fragrant, about 1 minute. Add pepperoni and saute for 1 minute. Add mushrooms, sprinkle with a pinch or two of salt, and saute until they have given off most of their juices. Add diced tomatoes, juice and all, to pan. Bring to a simmer, uncovered, and simmer for 10 minutes. Add basil, stir in, and remove from heat. Remove spaghetti squash from oven, and using a fork, remove the "meat" from the squash. Put squash on plates, about 1 cup per serving. Top with spaghetti sauce. Serving Size:?makes 6 servings
