Here is how you make Chicken and Peppers Risotto:

This dish requires a small bit of multi-tasking.1)In a quart pan, get your chicken broth simmering. We don't want to boil anything, just get it warm enough to react well with the rice when we need it.2) While the broth is warming up, dice all of your vegetables up.3) In a very large saucepan on medium high heat, put 1 T. of the Olive Oil in, and cook the vegetables until the onions are semi-translucent.4) While your vegetables are cooking, in a separate skillet, put the remaining T of Olivie Oil and cook the chicken until it is cooked throughout. If you still have time while your veggies are cooking, cut the chicken into strips or small chunks.5) Once the veggies are done, begin introducing the chicken broth a little at a time (about 1/4 c. ). Let the broth completely get absorbed/evaporated before adding more. 6) After several additions of broth, the rice should begin to soften up. About half way through the broth, add the diced chicken to the rest of the mix. Continue adding broth until the rice is yielding, but still firm.
