Here is how you make KJC's Pork and Chicken Sausage and Peppers:

Thinly slice the onions. Slice the peppers a little thicker. You can use a food processor for both, if you prefer (but use the slicer). Sautee the vegetables in the olive oil for 5 to 7 minutes until they are softened and glistening. Add the sausage, whole (I used 2 chicken sausage and 1 hot pork sausage). Cover with lid, cook 5 minutes, flip sausage and cook another 5 minutes,. Remove the peppers and onions. Flip sausage and cook another 5 minutes. Flip and cook another 5 minutes. Cut sausage in half across diameter. Slice sausage links down the middle lengthwise. You will now have 12 pieces. Add onions and peppers back. Cook for another 5 to 10 minutes. Make sure all meats are well cooked before removing. TIP: during cooking, your pan may become dry, add several TBS of water each time it happens to deglaze the pan. You will create a small amount of delicious juices when you do this. Add a little so that you don't end up with a liquid mess. Add fresh ground black pepper to taste.
