Here is how you make Jeanettes Slow Cooked Chicken cacciatore:

I start with using my canned tomatoes from the garden, but you can use three cups of any type you like. Put the tomatoes whole or blended in the slow cooker. My kids will only eat the sauce if the tomatoes are blended smooth. I put the onion in a skillet with the EVO and the shredded carrot and let them sweat out for about ten minutes. Do not let them burn or you will have to start over. After they start to melt down add the garlic and let cook for about two minutes. I then heat the mushrooms with the mixture or you can add them straight to the tomato sauce. Then add them to the slow cooker with the tomatoes and then add the chicken. Let cook for about three hours on high. I then add the bell peppers and let cook for about another hour. But the peppers can be added with everything else. This meal can be adjusted to your tastes and likes. I also add sugar and Italian spice blend in the beginning, but as said add the flavors you normally would.
