In a medium bowl, combine wine, chicken broth, lemon juice, sale, white pepper and garlic and set aside. Place the flour in a small bowl; place the beaten egg in a separate small bowl.Preheat a skillet over medium heat. Drain the oil from the tomatoes, and add the oil to the pan to heat. Dredge the chicken breast halves in the flour, and then dip in the beaten egg. Cook the chicken until lightly brown, 3 to 4 minutes per side. Discard half the oil from the pan. Add a pinch of flour to the remaining oil and chicken. Add the wine mixture and let it simmer until it is reduced by half, about 10 minutes.
