1 boneless skinless chicken breast
1 medium summer squash
1/2 cup onion (more or less to personal preference)
1 clove garlic, crushed
2 cups jarred spaghetti sauce
1 tbsp grated parmesan
1 tsp liquid smoke
salt and pepper to taste
Pam cooking spray with olive oil

Here is how you make Smokey Chicken and Squash Parmesan:

Pre-heat a pan over medium heat and spray with Pam. Dice the onion and saute in pan. While the onion cooks dice your chicken. When onion looks translucent add chicken. Stir frequently and cut squash into bite size pieces. When chicken is no longer pink, add garlic, squash, salt, and pepper. Stir and cook for another 5 mins or so. Then add the spaghetti sauce, parmesan, and liquid smoke. Cover and cook 15-20 minutes stirring occasionally, until squash looks cooked (soft, but not falling apart and mushy). Serve.I served it over pasta and topped with shredded "pizza" cheese for that chicken parm craving I was having at the time, but would be wonderful on its own or as a sort of relish over a whole grilled chicken breast, etc. The original recipe was made with dried onion and garlic flakes cause I was lazy that night, so both work well for the dish.Serving Size:?Makes enough for 2-4.
