2 tbsp red pepper flakes

Heat oil and garlic in skillet. Add spinach. Remove spinach when wilted. Set aside.In the meantime: layer chopped mushrooms, tomatoes and basil on top of chicken. Sprinkle with red pepper and salt and pepper. Roll and secure with toothpick. Add chicken to oil/garlic and cook until brown (about 10 minutes). In final two minutes, add amaretto to form a glaze.
