500 grams Spinach, frozen
2 cans (4 cups) Chick Peas
1/2 tsp Granulated Sugar
1/2 tsp Salt
1 tsp Pepper, black
Cayenne Pepper, to taste (optional)


How Do I Make Chickpeas Florentine?

Here is how you make Chickpeas Florentine:

Saute the garlic and onion in olive oil until onions soften and start to become translucent. Stir in spices.Add Tomato Paste and mix in 3 cans of water. Stir well, until paste is dissolved in the water and garlic/onion is well combined. Add salt, pepper, and sugar to taste.Add frozen spinach to the sauce, cover pot, and let simmer on medium-low, stirring occasionally, until spinach is warm and well mixed into the sauce.Add chickpeas. Stir into the sauce, cover, and continue to simmer, stirring occasionally, until all components are heated and sauce begins to bubble.Serve in bowls, as the texture will be a bit like stew. If you wish, add cheese -- parmesan or grated mozzarella, or you can mix a dollop of ricotta or cottage cheese into your bowl for a creamier sauce.
