How Do I Make Classic Bolognaise?

Here is how you make Classic Bolognaise:

Heat a large saucepan and add the mince - no need for oil, there's plenty of fat in the mince. Stir well until browned and season well with black pepper. Leave to cook until well browned - almost burnt; this caramelises the mince and really brings out the flavour. If you like, crumble in a beef stock cube to really amp up the beefiness.When well cooked add a good slug of red wine along with the Henderson's relish and balsamic vinegar, and cook until the liquid reduces down. Add the coarsely chopped onion and crushed garlic, stir well and cook for another 10 minutes then add the chopped red pepper. Cook for another 5-10 minutes before adding the tinned tomatoes and lemon juice. Stir in the paprika. oregano and pesto, reduce the heat and cook for at least half an hour - although the longer you cook it the richer the sauce is.
