This is as close to Caesar Cardini's original recipe as I've been able to track down. It's a delightful dressing, and fairly different from Caesar dressing you get in stores. This is something that you can quickly make (though preparing the oil before is a good idea), and it isn't recommended to be kept around. It's so easy to make I often make it at the table while talking with my guests.

What Are The Ingredients For Classic Caesar Dressing Recipe?

The ingredients for Classic Caesar Dressing are:

1/2 cup olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 eggs, coddled (see Step 4)
Juice of 2 medium lemons
8-10 drops of Worcestershire sauce
Greens (see instructions) (Not included in the nutritional count)

How Do I Make Classic Caesar Dressing?

Here is how you make Classic Caesar Dressing:

Greens: The amount of greens per person can be anywhere from 2 cups to 4 cups, depending on how thick you want the sauce, and how far you want to spread it. (Meaning 8 to 16 cups greens) Untraditional, but I prefer using spinach rather than lettuce.1. Peel, cut and mince the garlic, and place in the olive oil. The longer you do this before you make the rest of the meal, the more the garlic flavour will infuse the oil, I prefer to make this a day ahead, but it can be made five days ahead, or right before the meal. (If making it on the fly, gently heating the oil will help release the garlic's flavour.)2. Put enough water to cover two eggs in a pot, and turn on the heat. Proceed to step 3 as the water heats up.3. Put your greens in a large bowl, and toss with the garliced oil. Add salt and pepper, tossing, and adding more salt/pepper to taste.4. To coddle the eggs, place the eggs in the heated water. Let the water begin to boil, leave for one minute, then quickly remove the pot from the stove, and swap the boiling water for cold water. This "coddling" will cook some of the egg white, and thicken the rest, and the yolk.5. Break the coddled eggs over the lettuce, make sure the yolk runs over the greens. If you want to include the egg whites you can carefully use a spoon, or you can just use the yolk. Toss the salad.6. Add lemon juice and Worcestershire sauce. Toss, and add as much parmesan cheese as desired for taste and thickness, if any.
