I adapted this from a Weight Watchers recipe. One serving = 6 points. Origional recipe used ground beef (which will add a 2 extra points to the serving value. also all cheese was fat free - yuck. Not necessary - low fat is perfectly fine and much more enjoyable). VERY good!!!

4 cloves garlic
1 small onion, minced
1/2 tbsp olive oil
10-12 leaves of basil
18 OZ chicken (3oz per serv)
18 Egg Roll Wrappers
1 1/2 cup Low-fat (NOT fat free) cottage cheese
4 wedges Laughing Cow Cheese Wedge, Garlic & Herb, Light
2 low fat mozzarella cheese sticks
3-4 cups fresh spinach

Here is how you make Cheesy Lasagna made with Egg Roll Wrappers:

1.Preheat Oven to 375 degrees. Lightly spritz a rectangular glass baking dish with olive oil to grease pan. 2.Combine tomatoes, garlic, shallot, basil, and olive oil in food processor, pulse until pureed then set aside. 3.In a skillet over medium high heat cook chicken pieces (can grind before hand)(Optional: I seasoned the ground chicken with oregano, salt, pepper, garlic powder, onion powder) 4.Once ground chicken is cooked through, add cottage cheese and laughing cow wedges to skillet. Stir constantly until melted, then set aside. 5.Begin layering lasagna in the following order: sauce, egg roll wrapper, generous amounts of spinach, 1/3 of meat mixture. 6.Repeat layer 3 times, ending with egg roll wrapper topped lightly with sauce. 7.Break up the Mozzarella cheese sticks and sprinkle over the top and garnish with basil. 8.Bake for 15 minutes.
