1 egg, beaten
8 oz shredded part-skim mozzarella
2 oz shredded part-skim mozzarella. reserved
1/4 c parmesan cheese
1/2 c parmesan cheese, reserved
salt and pepper to taste
Italian seasoning
1/2 t thyme
Other seasonings as desired

Here is how you make Busy Mom's Mostly Homemade Lasagna:

1. Preheat oven to 375.2. In a saucepan, brown meat and season to taste, drain any excess fat, add spaghetti sauce, 1 cup water, and bring to boil. Once boiling, reduce to low (to prevent splatter).3. Meanwhile, in a medium bowl, beat egg and add ricotta, 8 oz mozzarella, 1/3 c water, 1/4 c parmesan, and desired spices, including salt and pepper.4. Slice zucchini into thin slices.5. To assemble, layer as follows in non-stick sprayed 9x13 pan: 1 c sauce (enough to coat bottom of pan), lasagna strips, 1/3 cheese mixture, zucchini slices; repeat two more times and top final layer with sauce followed by remaining parmesan and mozzarella.6. Bake at 375 covered with foil for 40 minutes. Remove foil and bake 15 more minutes. Let stand 10 minutes before cutting.
