What Are The Ingredients For Kimberley's Lasagna Recipe?

The ingredients for Kimberley's Lasagna are:

1 zucchini and 1 eggplant sliced into 1/4 inch strips
1 large can diced tomatoes
1 large can no salt added tomato sauce
1 pack lasanga noodles, soak in warm water to soften, do not cook or
use the no cook noodles
1 can of beans in tomato sauce
2 cups sliced mushrooms
1 package frozen spinach, thawed and drained well (squeeze in towel
to get rid of as much moisture as possible)
1 large onion choppped


2 Tbsp of italian season
1 tsp red pepper flakes
1 tsp black pepper
1/2 tsp salt
2 Tbsp chopped garlic and
flour to coat zucchini,eggplant and mushrooms
olive or canola oil to fry them in

If you're not vegetarian (vegan)then you can add:

1 small tub of ricotta cheese,drained if necessary
1 cup mozzarella cheese
1/2 cup parmesan or asiago cheese or use 1/4 cup of each, for best
flavour.





How Do I Make Kimberley's Lasagna?

Here is how you make Kimberley's Lasagna:

Take the sliced zucchini, eggplant and sliced mushrooms and coat themlightly in flour and then lightly saute them until they are soft.Setthem to drain on paper towel and cool. Cook the onions and garlicuntil wilted but not browned, cool and set aside.Open the cans of the other ingredients and mix 1 Tbsp of italianseason into the tomato sauce and add half of the red pepper flakesand black pepper into it and stir.** If you're using the cheese mixture, then add the thawed anddrained spinach to the cheeses and mix and add the rest of the spices.Place a little sauce on the bottom of your baking dish as you makelasagna normally and just put different layers of the veggies andnoodles and sauce (and cheese mixture) in the pan and bake for 45minutes at 325 degrees covered with foil and until hot and bubbly.Serve with salad and garlic bread.Number of Servings: 8Recipe submitted by SparkPeople user BIGGESTLOSERKLJ.
