1 can (4 ounces) sliced mushrooms (or 1/2 of an 8 oz package fresh mushrooms)
1 cup part skim ricotta cheese
1 egg, beaten
1 1/2 cups shredded mozzarella cheese
1/2 tablespoon Italian seasoning
1/2 tsp nutmeg, ground
1/2 tsp Italian Seasoning
18 slices Pepperoni (1-3/8" dia x 1/8" thick)

1. Preheat the oven to 350?F. Grease an 8 x 8-inch glass baking dish with nonstick cooking spray. 2. Brown the ground beef in a large frying pan. Drain off the excess oil. Remove beef from pan. 3. Lightly brown zucchini in frying pan, remove.4. Add garlic, pepper & onion to pan & saut? until onion is transparent. 5. Add beef, spaghetti sauce & mushrooms, & simmer for 10 minutes. 6. Meanwhile, in a small bowl, mix the ricotta, egg, 1/4 cup mozzarella, nutmeg & Italian seasoning. Beat well with a fork.7. Spread half the beef mixture in the bottom of the dish. Spread half the ricotta mixture on top of the beef mixture. Lay half the pepperoni slices on top of the ricotta mixture. Layer the zucchini. Put half the remaining shredded mozzarella over the zucchini slices. Repeat the layers with the remaining ingredients. 8. Bake until bubbly (about 20 minutes).
