1 pound extra lean ground beef (93/7)
2 cloves garlic, minced
1 teaspoonful dried basil
1 teaspoonful dried oregano
2 jars (~24 oz each) of your favorite sauce (I like to mix Muir Glen Garlic Roasted Garlic and Muir Glen Tomato Basil sauces)
1 cup chicken stock
8 ounces cream cheese, softened
3 cups freshly grated mozzarella
1 box whole grain lasagna noodles (I like Hodgson Mill)
1/2 head cauliflower, roughly chopped
1 large zucchini, roughly chopped
5 medium carrots, roughly chopped
1 cup baby spinach, fresh


How Do I Make Veggified Lasagna?

Here is how you make Veggified Lasagna:

1. Place cauliflower and carrots into steamer.2. Thoroughly cook the ground beef, garlic and herbs in a large skillet, stirring frequently to break up meat. Once meat is browned, add pasta sauce and bring to a simmer. Reduce heat to low.3. In medium saucepan over medium heat, bring chicken stock to a boil. Add cream cheese, turn heat to low, and whisk until smooth (about 6 minutes). Remove from heat.4. While cheese is cooking. add zucchini to steamer. When zucchini begins to soften, add spinach and cook for 2 more minutes. Place all steamed vegetables into a blender or food processor and puree until smooth (may need to add a small amount of water, but mixture should be thick). Stir vegetable mixture into meat sauce.5. Preheat oven to 400 degrees.6. Arrange ingredients into 9" x 13" pan in the following order, as evenly as possible (bottom to top): ~1/2 meat mixture ~1 cup mozzarella ~4-5 lasagna noodles ~cream cheese sauce ~1 cup mozzarella ~4-5 lasagna noodles ~1/2 meat mixture ~1 cup mozzarella7. Bake until brown and bubbling, about 35 minutes.
