Sauce:

- Ground Turkey - 1/2 lb (could also use lean beef)
- Onion - 1 medium
- Bell Pepper - 1 medium (any color)
- Diced tomatoes - 1 1/2 can
- Red wine - about 1 cup
- Tomato paste - 1/2 cup
- Italian spices: any combination of basil, thyme, oregano, etc.
- Garlic - 1 clove
- Salt and pepper - to taste


Cheese Mixture:

- Cottage cheese, 1% Milkfat - 2 cups (not packed)
- 1 large egg, or equiv egg substitute
- Mozzarella cheese, part skim - 2 cups
- Whole leaf spinich - 1 can (approx 15 oz)


How Do I Make Old Fashioned Lasagna (No Noodle)?

Here is how you make Old Fashioned Lasagna (No Noodle):

To make the sauce:Brown the turkey in a skillet. In the same pan (or possibly a larger one) heat some fat free cooking spray, and add the chopped onions and peppers, and cook in very low heat until the onions are transparent and the peppers are tender (it takes a few minutes, the heat has to be very low so it doesnt fry). Add the tomatoes, wine, Italian spices, garlic, salt and pepper (season to taste), and the meat. Let it cook very slowly for at least 1 hour stirring occasionaly. The zucchini will release water upon cooking so it is best for the sauce to be "chunky". Mix the cottage cheese, egg, spinich, and 1 cup of the mozzarella cheese. Add salt and pepper to taste. (You can also add a little bit of parmesan cheese)Using a 9x13 pan, add a thin layer of sauce to the bottom, add a layer of zucchini, then a layer of the filling and then a layer of sauce. Repeat. Put a 3rd layer of Zucchini and cover with the sauce. Bake for about 1 hr (until the zucchini is tender). Top with the remaining mozzarella cheese and bake for another 10 minutes until the cheese is melted. Serving Size: It yields about 8 generous servings.
