4 large Portobello Mushrooms, chopped

1 chopped onion
3 cloves chopped garlic
1 tbsp olive oil

12 Lasagna sheets, or the number needed for three layers
100 g cheddar cheese
100 g Reduced Fat Feta Cheese



How Do I Make Portobello Lasagna?

Here is how you make Portobello Lasagna:

Sauce:Finely chop the onions, garlic and mushrooms. Heat the olive oil in a saucepan, and add the onions once it's hot. Fry for about 5 minutes, and add the garlic and mushrooms. Fry together for 5 more minutes, then add the tomato paste, and season with salt, pepper, basil and bay leaves. Simmer for 20 minutes on medium heat. Preheat the oven to 150 C (more or less 300 F). Meanwhile, prepare the lasagna sheets (I would recommend not using pre-cooked) by pouring hot water over them and leaving for a few minutes, until soft. Place the first layer, 4 sheets, in a rectangular (oven-safe) dish. Distribute slightly more than 1/3 of the mushroom sauce evenly over the lasagna sheets, and then sprinkle 2/3 of the feta cheese over it. Place your next layer of lasagna sheets evenly on top, and repeat, again with slightly more than 1/3 of the sauce. Sprinkle the remaining feta cheese, with 1/4 of the cheddar cheese evenly over the sauce. Place your final layer of lasagna sheets evenly over the sauce, and spread the remaining sauce evenly over them, looking to cover all the pasta. Sprinkle the remaining cheddar cheese evenly over the lasagna. Cover with aluminum foil. Place in the oven for 20 minutes. Pull out of the oven and take the foil off the lasagna.
