I just threw this together because I had all the ingredients on hand and it tastes AMAZING. I seriously am impressed with myself for this one. Tons of great flavor, fiber and protein. There are a few ingredients you may not have used before, probably the crumbles and the fiber gourmet pasta. You can get the crumbles at most super markets and I order the Fiber Gourmet pasta from Amazon.com or directly from their website. The pasta is incredible and only 130 calories per serving as opposed to the standard 210. If you want to reduce the sodium, just use low sodium tomato sauce and omit the salt.

2 2/3 C - Morning Star Farms Meal Starters, Grillers Recipe Crumbles
8 oz (one box) - Fiber Gourmet Lasagna Noodles
2 C - Ragu Light Tomato Sauce
3/4 C - Cabot Part Skim Shredded Mozzarella
1 C - Sargento Fat Free Ricotta Cheese
1 C - Broccoli, chopped
5 - Mushrooms, freshly sliced, medium
1 C - Spinach, fresh or loosely packed frozen
5 - Garlic cloves, chopped tiny (by hand, not the garlic press!)
1 TBS - Basil
1 Tsp - NutraSalt (it's basically "light salt")
1 Tsp - Pepper, black
1 TBS - Fennel seed
1 TBS - Italian Seasoning Blend, like Mrs. Dash

Here is how you make Karen's Scrumptious Vegetarian Lasagna:

Serves:?61. Preheat oven to 375 degrees.2. Cook lasagna noodles as directed on package. 3. In a medium bowl, combine ricotta cheese, basil, NutraSalt, pepper, fennel and italian seasoning and mix well with a fork.4. Using a 9 by 13 baking dish, (I used the Emile Henry Auberge Ruffled Rectangular Baker - I love it!!) pour 1/2 cup of the sauce on the bottom and spread evenly. 5. Arrange 1 layer of lasagna noodles. 6. Next, take half of the ricotta mixture at spread on the noodles. (I did this with my hands, much easier). 7. Then arrange the sliced mushrooms neatly all over. 8. Pour on 1/2 of the Crumbles. 9. Spread on 1/2 cup of the sauce. 10. Arrange next layer of noodles. 11. Spread the remaining ricotta on top. 12. Add the broccoli and spinach evenly on top. 13. Pour on remaining half of the crumbles. 14. Sprinkle with half of the shredded cheese. 15. Pour on 1/2 cup of the sauce. 16. Put your last layer of noodles on. 17. Cover with the remaining 1/2 cup of sauce.18. Sprinkle on the remaining shredded cheese. 19. Lastly, sprinkle on the chopped garlic. Feel free to sprinkle on some additional herbs on top - I sure do.Stick it in the oven and bake for 50-60 minutes or until bubbly and lightly browned on top.Enjoy! I like to make this, cut it up and freeze it in portions. Tastes a lot better than a frozen TV dinner and really isn't hard to make at all.
