1 C Arborio Rice
1/2 cup white wine
1 Lime
3/4 Cup Parmesan Cheese, Grated
4 Cups chicken broth


How Do I Make Lime Risotto?

Here is how you make Lime Risotto:

Saute' onion in 1 T butter and olive oil. Add Rice, cook until starting to brown slightly. Turn heat to medium. Add wine and the rind of the lime, stir until absorbed. Add 1/2 cup broth, stir until absorbed. Continue adding 1/2 cup broth until rice is cooked. Add the juice of half of the lime.
