7 tsp. Better Than Bouillon Mushroom Base
7 c. Tap Water
1/2 tsp Fresh Ground Black Pepper
1/3 c. Pecorino Romano Cheese - grated


How Do I Make Fresh Mushroom Risotto?

Here is how you make Fresh Mushroom Risotto:

1. Combine water and Better Than Bouillon Mushroom Base is a saucepan. Warm over medium heat.2. Heat a LARGE non-stick skillet to high heat. Add sliced mushrooms to dry skillet and stir as the mushrooms release juices. Turn heat to medium-high and continue to stir until juice starts to be absorbed and mushrooms are browned. Remove mushrooms from pan and set mushrooms aside.3. Return pan to medium heat and add olive oil. Stir in onion and garlic and cook until onion begins to soften. Add rice, stirring to coat with onion/oil, about 2 minutes.4. Return heat to medium-high and using a mug or measuring cup with a handle, add between 1/2 - 3/4 cup of mushroom broth to the rice. Stir until broth is completely absorbed. Continue adding the hot broth one scoopful at a time, stirring continuously, making sure the liquid becomes absorbed before adding more broth. When you've got almost all the broth added, begin turning the heat down to medium. Add last of broth and mushrooms to pan and continue to stir, turning heat down if necessary. After about 15 to 30 minutes total cooking time, the rice will be al dente. If it is not tender, it needs a little extra cooking time. You'll need to add a little hot water and continue to cook until desired consistency.5.
