Preheat oven to 450 degrees F. Spray baking sheet with Olive Oil. Slice each eggplant into 6 pieces about 1 to 1/2 inch thick. Place on the oiled baking sheet and lightly season with salt and pepper. Bake the eggplant at 450 degrees F until the slices begin turning deep brown on top, about 12 to 15 minutes. Remove eggplant from the oven and put the slices on a plate to cool.Lower the oven temperature to 350 degrees F. In an 9 x 12 inch baking pan, place the six largest eggplant slices. Over each slice, spread 1/4 cup of tomato sauce and sprinkle with a teaspoon of basil. Place one very thin slice of mozzarella on each piece and sprinkle each with 1 tsp of parmesan.
