How Do I Make Tempeh Parmesan?

Here is how you make Tempeh Parmesan:

Arrange a rack in the top third of the oven and heat to broil. Line a baking sheet with foil and set aside.Depending on the thickness and shape of the tempeh, cut it into pieces as needed. (You may need to butterfly the tempeh in half.) Brush one side of the tempeh with the tomato paste. Sprinkle with the oregano and season with salt and pepper.Heat the oil in a small nonstick frying pan over medium heat until shimmering. Add the tempeh and cook until golden-brown, 2 to 3 minutes on each side. Remove the pan from the heat.Spoon the marinara sauce evenly over the tempeh, then sprinkle with the Parmesan. Sprinkle the mozzarella evenly over the top half of the roll.Broil until the mozzarella is melted, about 2 minutes (keep a close eye on it).
