2 chicken breasts, cut into bite sized pieces
1 lb. whole wheat pasta (any type)
1 - 6.5 oz. can artichoke hearts in water
10 pitted, roughly chopped black olives
1 - 14.5 oz. can diced tomatoes and their juice
2 slices of bacon
1-1/2 T fresh oregano
1 T. extra virgin olive oil
Crumbled feta cheese


How Do I Make Meditteranean Pasta?

Here is how you make Meditteranean Pasta:

Chop up bacon into small pieces and cook until crispy in a deep pan. Remove from pan using a slotted spoon and allow to drain on a paper towel. Discard bacon grease from pan and add 1 T extra virgin olive oil. Salt and pepper chicken to taste and add to pan. Cook through. Once chicken is cooked add the bacon, tomatoes, oregano, olives, and artichokes and allow to simmer for 20 minutes. While the sauce is simmering cook the pasta according to package directions. Once the pasta is cooked, add it to the sauce and stir.
