1/3 cup pine nuts toasted
2 1/2 cups fresh basil leaves
1 tsp. lemon juice
salt, dash
4 cloves garlic
1/2 cup extra virgin olive oil
1/4 cup grated Parmesan cheese
1/4 cup grated Romano cheese
freshly ground black pepper to taste

8 oz. dry Bionaturae whole wheat elbow macaroni
1 tsp. extra virgin olive oil
1/4 cup "Basil Pesto Sauce"- see instructions
10 pitted black (Kalamata) olives, halves
1/2 T. capers, rinsed & drained
6 oz. nova smoked salmon, cut into thin strips
1 T. freshly grated Romano cheese


How Do I Make Pasta with Smoked Salmon and Basil Pesto?

Here is how you make Pasta with Smoked Salmon and Basil Pesto:

Make Basil Pesto Sauce: Toast pine nuts in small nonstick skillet for 1 to 2 minutes. Remove from heat and set aside. Cut basil leaves into strips. Combine lemon juice, salt and garlic in a mortar and mash into a paste. Add pine nuts and continue to mash until nuts are ground. Add basil strips a few at a time grinding them into the nut paste. Add olive oil and mash until paste becomes loose. Add cheeses and pepper and mix well. 75 calories per Tablespoon. Use 1/4 cup in salmon recipe which follows and refrigerate remaining pesto. Pesto will keep in refrigerator for a few days.Boil pasta until al dente according to package directions, drain and toss with olive oil. Heat 1/4 cup Basil Pesto Sauce over low heat and add capers and olives. Remove from heat and add salmon strips. Toss with cooked pasta and divide into 4 serving bowls. Sprinkle with 1/4 T.
