Spicy Shimp and Sausage mixed with Pasta. The sodium is a bit high due to my choice of pasta sauces -- to decrease sodium, choose a low sodium jarred sauce or homemade sauce instead. 3 Evergood Louisiana Hot Sausage Links, quartered and sliced
1/4 cup sundried tomatoes in oil (drained and minced)
2 cloves garlic, minced
1 13 1/2 oz. package penne or gemelli pasta
1 25 oz. jar pasta sauce
1/2 lb. fresh or frozen shrimp (thawed, shelled and deveined)
1 cup loosely packed basil leaves, chopped
1 cup chopped fresh tomatoes (may use halved grape or cherry tomatoes if you prefer)
1/2 to 1 cup clam juice (optional)
Juice of 1 lemon
1 tsp. lemon zest

*** optional: May add red pepper flakes, black or green olives, calamata olives, capers for variation.

Here is how you make Laurie's Pasta with Shrimp and Sausage:

1. Precook sausage in pan until slightly browned.2. Prepare pasta according to package directions, drain.3. Meanwhile, heat large skillet on medium until hot. Add sundried tomatoes and garlic, cook until garlic is fragrant (about 1 minute).4. Add pasta sauce to skillet, rinsing jar with red wine to get all chunks from jar into sauce.5. Once sauce bubbles, add clam juice, shrimp and tomotoes to sauce. You may wish to cut shrimp into bite-sized portions before putting into sauce. Cover and cook 2-4 minutes or until shrimp are pink in color and cooked through, checking frequently to avoid overcooking shrimp.6. Add pasta, lemon zest and lemon juice to sauce. Toss to coat pasta.7. Serve with chopped basil and parmesan cheese on top.
