This recipe was given to me by a friend (whose grandma came from Italy). The only difference is, I add italian sausage to it for a twist (and please note...doesn't have to be "stop & shop" sausage as it says in the recipe...any italian sausage will do!). It's delish. The ingredients for Pasta Fajoli with sausage are:

5 links sweet (or hot) italian sausage (remove from casing)
Canned tomato sauce - - 1 large can & 1 medium can
~ 6 cloves garlic-minced
Olive Oil (for cooking the sausage) - you don't HAVE to use 2 tbsp. - I just estimated about how much (as I never measure it). Definitely no more than 2 tbsp. (preferably less)
Basil & Oregano (or italian seasoning)
Garlic powder - 1 tbsp. or to taste
Approx. 1/3 - 1/2 a box of any type of small pasta - I use ditallini
1 can of canellini beans undrained (they are similar to white beans...but they are called canellini beans. I couldn't find them in the recipe calculator)
Salt & pepper to taste



How Do I Make Pasta Fajoli with sausage?

Here is how you make Pasta Fajoli with sausage:

1st pot:pour olive oil in the pan (I use a large skillet). Remove sausage from casing and fry in olive oil. Break the sausage down into small pieces (do not leave in large chunks). Cook thoroughly. Add minced garlic and stir. Add tomato sauce, garlic powder and other spices. Let simmer (so the sauce takes on the flavor of the sausage)2nd pot:While cooking the above, start a pot of water to boil. Once boiling, add ditallini (I use about a 1/3 - 1/2 a box...sorry, not sure exactly how many ozs. that is...I guessed 6) or you can use any other type of small pasta. Cook according to directions. Drain and add to pot #1 above.Add cannelini beans.Cover and allow it to simmer on low for ~ 1 hr. This is not a soup...this is more like a "chili" consistency. You can add more tomato sauce if you'd like it a little thinner. I truly don't use a recipe when I make it...I don't measure the spices...it is all to "taste". This is really delicious.
