Here is how you make Penne Norcia:

Cook and drain pasta while preparing sauce.Pour olive oil in saute pan and brown sausage.Add garlic and mushrooms and let garlic cook until pale golden color.Pour in white wine and let alcohol evaporate.Add tomato sauce, cream, salt and pepper then allow sauce to simmer until it thicens and sausage and mushrooms are cooked.Add hot pasta to sauce.
