Remove from heat, slice thin.While water is boiling and sausages are simmering, heat one teaspoon of olive oil in a large saucepot. Sweat the onions, garlic, and habanero pepper together until onions begin to become translucent (approx. 4-5 minutes). Add heaping tablespoon of tomato paste, and stir to incorporate. Add diced tomatoes, strained tomatoes, and ricotta cheese. Stir until well combined.Drain pasta, DO NOT RINSE. Add immediately to sauce, and stir. The remaining starch on the pasta will help to slightly thicken the sauce.
