There are a million pesto recipes out there. Mine is a little different because I use pecans for the bulk of the nuts. That's why it's Southern Basil Pesto! What Are The Ingredients For Southern Basil Pesto Recipe?The ingredients for Southern Basil Pesto are: Separate the leaves from the stems, wash the leaves and dry them well. I use a salad spinner to dry the leaves. You can toss the stems in the compost pile. Before starting the pesto, toast the 2 types of nuts in a dry saute pan over medium heat, moving them around frequently until lightly browned and fragrant! Let nuts cool. Use a food processor or blender to make this recipe, no more cooking!! Into the appliance, toss the clean, dry basil, 1/2 cup shredded parmesan cheese, 2 large cloves of garlic (peeled), the toasted nuts, a good amount of pepper (start with 1teaspoon freshly ground) and a small pinch of salt. The parmesan is quite salty already. Pulse the food processor a few times until the basil mix is chopped fairly fine. With the motor running, drizzle the olive oil slowly into the mixture. Stop once to scrape down the sides of the bowl for better mixing. Finish adding the remaining oil. Check for taste and consistency. Add more salt or pepper if needed. If mixture is too thick add a little more olive oil. Place it into a covered bowl and refrigerate until needed.How Do I Make Southern Basil Pesto?Here is how you make Southern Basil Pesto: Uses for this recipe are only limited by your imagination! At only 38 calories per tablespoon go nuts with it! Mix it into a store bought salad dressing for some extra zip. Add it to mayo to perk up your tuna salad sandwich. Use it in marinades. Baste grilled meats or fish with it. Stir some into some EVOO and dip your french bread into it. Throw some into a stew or soup for that extra something. Add a little cream to it and stir it into sauteed veg and chicken. You might even try tossing some with hot pasta and extra parmesan cheese-that's probably too revolutionary.
