I had a lot of trouble getting a no flour pizza crust to work. It kept sticking to my no-stick pan even when it was well oiled, and turned out soggy and limp. So I doctored it till it worked, but had to add whole wheat flour. Fine shredded Mozzarella is a MUST for this recipe. Don't use coarse shredded. Fine shredded cheese produces a more pleasant and consistent texture.This is nothing like a real pizza crust. It's a bit spongy like an omelet and the browned areas are slightly chewy. If you can get past the texture it works well as a low carb pizza crust substitute.
