cut the loin into 3/4" pieces, then pound out and add prosciutto into the pork. Add all dry ingredients into the flour and then pin the sage leaf to each piece and dredge into the flour mixture.Start the olive oil and a little butter in a 12" frying pan and start frying prosciutto side down for 1-2 minutes until done....(don't over cook) then turn over and finish. place on a platter then add the wine to the pan and deglaze the bits for a minute to cook off the alcohol then add the chicken broth and the remaining butter.
