1 large Red or Sweet Onion
Cracked Black Pepper
1 tbsp Extra Virgin Olive Oil
4 Tbs Parmesan Cheese, shredded
Salt - a pinch or dash per packet
Parsley, 2 sprigs finely chopped or any other green potato friendly herb - see recipe*

Here is how you make Grilled Parmesan Herb Potato Packets:

Preheat Outside Grill on Medium High setting when you start your prep. Or start your charcoal grill about 30 minutes before you plan to grillYou can also do these in the oven at 400F1) Cut 4 pieces of nonstick aluminum Foil into squares. I use nonstick because all the brown grilled carmelized goodness goes right on your plate instead of sticking to the foil. 2) Scrub potatoes and slice into 1/4 inch slices divide between the 4 pieces of foil placing in the center of each piece.3) slice the onion into 1/4 inch slices. Separate into rings and distribute between the 4 foil packets. 4) Salt and pepper lightly and toss to mix potatoes and onion together.5) Drizzle with olive oil, just a little on each until you have used all of it.6) Sprinkle each packet with 1 tbsp of Parmesan cheese then distribute the herbs. *I used flat leafed Italian parsley but you can use fresh or dried dill, oregano, basil, red pepper flakes, Herbes de Provence, or whatever suits your mood or your cupboard. Then fold to close packets Draw two parallel sides up to touch, then fold over to make a seam about 1/2 inch wide continue to fold down until you can't fold anymore. Turn packet and fold in each end.Place packets on med grill and turn every 5-10 minutes. If your grill is hot and you have an upper shelf you may want to put them up on top after the first 10 minutes or so. Usually 30 minutes is plenty of time but is dependant on your grill temperature.
