Here is how you make Low-Gluten Sweet Potato Ravioli:

Combine all of the flours and spices. Mix well. Add eggs and a sprinkle of water. If dough is too dry, add another sprinkle of water. Flour a counter or flat surface. Roll dough out very thin. Cut out circles or squares (2 for each ravioli)Mash sweet potato and combine with ricotta. Add a little bit of salt if desired.Place a small amount of filling in the center of a circle of dough. Put another piece on top and seal edges. You may need to use a tiny amount of water on the edges to seal. Freeze or boil (10 minutes) and eat!
