Here is how you make Basic Risotto Starter:

Melt butter and olive oil in pan and add onions. Saute a few minutes and add any other veggies or meat you wish. Once slightly softened, add the rice. Mix to coat and stir until rice becomes a little translucent. Add the wine and cook down. Heat the broth and add one cup at a time until it is absorbed-about 20 minutes. Keep stirring and keep an eye on it! The rice will get creamy and soft when cooked. Add the cheese and milk and serve warm. Makes about 8 servings.Number of Servings: 8
