1 small head cabbage, washed and chopped
1 cup chopped onion
2 medium sized zucchini, sliced thick
1 can artichoke hearts, halved
1 can diced tomatoes with garlic and basil
1 can Garbanzo Beans
1 can White Beans

6 or more roasted garlic cloves, using 2 tbsp. olive oil
Salt/Pepper/Basil/Red Pepper flakes to taste

Roast Garlic on low heat in the oven with two tablespoons olive oil. Cool, squeeze out cloves from skin and reserve oil with cloves. Combine sausage and onion in heavy pot, begin to brown. You can use a spray of PAM if you need to. Add roasted garlic and oil, stir for another minute, watching not to burn.Add can of diced tomatoes and chicken stock. Add basil, crushed red pepper. Add cabbage and cauliflower. Cover and let cook until cabbage begins to wilt. Drain and add beans.Add spinach leaves, zucchini and artichoke hearts, heat through.
