1 table spoon canola oil
1 onion, chopped
2 cloves garlic; chopped
1 tablespoon dried oregano
1 teaspoon salt
1/4 teaspoon red pepper flakes
2 cans (28 ounces) plum tomatoes, pureed
1 red bell pepper; stemmed, seeded and chopped
1 green bell pepper; stemmed, seeded and chopped
4 fresh basil leaves
4 sprigs fresh flat-leaf parsley

Makes 5 1/2 cups1. In a deep pot, cook the beef over medium-low heat, stirring constantly, until browned, about 8 minutes. Remove to a plate.2. In same pot, reduce the heat to medium and add the oil, onion, garlic, oregano, salt and red pepper flakes. Cook, stirring, until softened, about 5 minutes.3. Add the tomatoes, bell peppers, basil and parsley and bring to a boil. Return the meat to the sauce. Reduce the heat to low and simmer until thickened, about 30 minutes.STORAGE: Let the mixture cool completely and store in airtight containers.
