This sauce is very easy to make and I use it as a spaghetti sauce, pizza sauce, and bread dipping sauce. This recipe is freezeable...........Very multi-purpose.......as a single person I usually divide the pot into several uses at a later date (I freeze at least 5 or 6 1 cup/8oz ziplock sandwich bags )

1/4 cup or 4 tablespoons of extra virgin olive oil

4 garlic cloves, minced or chopped (your preference)

1 yellow, red, orange sweet bell peppers, chopped

1 lb plum or roma tomatoes, 2 to 3 lbs, skined and diced

1 can 11.5 oz V8 vegetable juice you can use low sodium as well

32 oz water or homemade chicken stock**

1 12oz can tomato paste, preferrably w/o salt

***4 tsps sugar (optional)

** I have been unable to determine the nutritional value of homemade chicken stock......however, when I make this marinara sauce, I add 2 cups/16 ozs of my home- made chicken stock instead of water......you can either use water in place of or add one 11.5 oz can of chicken broth with less sodium, but it will make the nutrional value of sodium high**

*** I add sugar to cut the tomato acid

Non salt seasonings are optional..........I like Ms. Dash

*NOTE*---to skin tomatoes, bring pot of water to boil, re- move from burner, drop all tomatoes in pot let sit for 5 minutes....remove and cool.....then peelDice tomatoes, chop/mince garlic, chop sweet bell peppeIn large sauce pan add tomatoes and liquid, next add tomato paste and stir until dissolved, cook on low to medium low heatSautee garlic and sweet bell peppers in olive oil...then add oil and garlic to sauce pan with tomatoesCook on low to medium for at least 3 or more hours and be sure to stir occassioally............Turn off after cooking and let sit I normally make this sauce and let it sit overnight, but you can use it immediately after cooking if you choose to do so.This amount is equivalent to about 3-32oz size jarsNOTE--THIS MAKES 16/8OZ SERVINGS
