1/4 of a large yellow onion, diced fine
3 cloves of garlic, crushed a minced
1 tbsp dried basil
1 1/2 tbsp dried oregano
1 tsp salt
1 1/2 tsp pepper, black
1 can tomato sauce
1 can petit diced tomatoes, with juice, no spices
1/4 cup red wine (optional)


How Do I Make Italien Pasta Sauce?

Here is how you make Italien Pasta Sauce:

Start by bringing a medium non-stick pot to medium high heat. While the pot is heating chop 1/4 of a large onion, much be yellow, a walla walla will not have the same flavor, the dice should be fine, but still have body. About quarter inch squares. When pan is hot enough to feel the heat from 6-8 inches above, add 2 tbsp EVOO. Bring to a ripple. Add onions and toss to coat. Let onion cook, not brown, while you prepare garlic. Using fresh garlic, place on cutting board, separating the cloves. Use the side of a large knife to smash the garlic. Remove peel, and repeat with all cloves. This run your knife through them a few time to create a large mince. Any finer of a dice, and the garlic flavor will turn bitter in the sauce. Add to onions and toss. After about a minute of cooking, swirling occasionally, add the basil, oregano, pepper, and salt. Turn down to a low medium temperature and cook until edges of onion are just getting brown. Add both cans and stir. Bring to simmer. As soon at it reaches simmer, turn to low, put a lit on and cook for 1.5 hours. Stiring occasionally. After 1.5 hours, remove lid, stir and turn up heat to a higher simmer. Let it bubble, and stir frequently for half an hour. This should reduce the liquid. If desired add 1/4 cup of red wine to sauce. Let cool for 15 minutes. After period, use a blender to puree the sauce smooth, but leave a few chunks. Bring sauce back to simmer, and serve.
