1 Large white onion, peeled and chopped
1 Eggplant, peeled and cubed
3 Zucchini, peeled and cut in half, and then sliced length-wise
2 large (or three small) summer squash. peeled and sliced width-wise
6 TBSP Olive Oil
2 Cans diced tomatoes (14 oz or similar)
6 Cloves Garlic, diced, or chopped (alternatively, 1 TBSP dried, powdered garlic)
1 TBSP coarse, ground sea salt, or similar
1 Tsp Black Pepper


How Do I Make Pasta Primavera (Summer Sauce)?

Here is how you make Pasta Primavera (Summer Sauce):

After all vegetables are peeled and cut (prepared), place olive oil in deep, wide pot. (This allows room to mix and stir the unwieldy chunks of vegetables when they're not cooked down). Add onion and garlic to olive oil and stir around to ensure they are all covered by olive oil, and cook on medium heat, covered by lid, until translucent, tender. If using the powdered garlic, add it later so that it won't stick to bottom of pan and brown. Open lid frequently and continue to stir so that onions won't brown. Then add fresh-cut vegetables and about a half-cup water and get all vegetables good and wet, covered by onion-garlic olive oil. Cover and cook on medium, stirring frequently to ensure all vegetables are getting cooked. Once vegetables are cooked down somewhat, add the two cans of tomatoes (and garlic powder if you aren't using fresh garlic). Continue to stir and let cook on medium until a good consistent, but low boil ensues. After the low boil begins, turn down heat and simmer 30 minutes. Serve over egg noodle pasta (not factored into calories for this recipe) or similar pasta of your choice. I top with a tablespoon of grated parmesan, and (yummy) more garlic! Enjoy!
