Here is how you make Roasted vegetables in tomato sauce with fusili pasta:

Makes 6 servings (approx. 2 cups ea.)1. Heat oil in a reasonably deep oven dish (I use a small grill pan – without the wire rack of course) in the oven at 200F (fan assisted oven).2. Whilst waiting for the oil to heat up, chop all the vegetables into chunks no greater than 1” x 2”.3. Put al vegetables into hot oil and stir to ensure that the all pieces have some oil over them.4. Roast in the oven for 12 minutes.5. Remove and then stir round and roast for another 12 minutes.6. If the vegetables are not cooked, roast for another 5 minutes.7. Sprinkle with half of black pepper and half of chilli flakes.8. Cover with chopped tomatoes and stir into vegetables.9. Sprinkle the remaining black pepper and chilli flakes.10. Stir once more and put back into the oven.11. Boil water on hob to cook pasta (should be approx 10-12 minutes, but check the label for exact timings).12. Drain pasta and stir into sauce.13. Voila!
