Honeysuckle White Chipotle Turkey Sausage, 5 serving
Green Peppers (bell peppers), 2 cup, chopped
Mushrooms, fresh, 2 cup, pieces or slices
Eggplant, fresh, 4 cup, cubes (about 1 whole medium eggplant, skin removed and cut into cubes)
Onions, raw, 2 cup, chopped (about 1 large yellow onion)
Parsley, Fresh 2 tbsp
Italian Seasoning, dried 2 tbsp
water, 1 cup
black pepper, 2 tsp
Pam cooking spray
Large Spaghetti squash, 2


How Do I Make Michelle's Savory Spaghetti Sauce?

Here is how you make Michelle's Savory Spaghetti Sauce:

Cut spaghetti squash in half, remove seeds and place cut side down in a baking dish, fill with water about half way up squash and cook in oven at 350 for 1 hour and 15 minutes to 1 hour and 30 minutes. While the squash is cooking make sauce. Remove meat from casing and put in a hot 5 qt soup pot coated with pam cooking spray. Chop veggies and add in this order stirring each time you add more veggies. Onion, bell pepper, eggplant, mushrooms. Cook until veggies are soft and meat is fully cooked, about 10 minutes. Add sauce, black pepper, Italian Seasoning and water. Bring to a boil then simmer for 1 hour stirring occasionally. Add fresh parsley just before serving.
