How Do I Make Mama's Sauce'a?

Here is how you make Mama's Sauce'a:

Begin by heating olive oil in a pot or pan large enough to contain approximately 30 fl oz. A 3QT stock pot will work fine, but I actually use my large cast iron pan- so as long as it fits, whatever works for you! While the oil is heating, chop up those onions and garlic (or crushed if you prefer)- and put it all into the pan to saute- before your oil gets too hot. This means that you want everything to lose its color, NOT turn brown. Now you have to trust me on this one- lose the measurements on the spices and "trust your gut". Or better yet, take a tablespoon of the Italian Spices and ump it into the palm of your hand to see what it looks like- then put it straight into the garlic/onion mixture. Keep stirring things around, and it should all look pretty interesting about now. Honestly? You could even put in a little bit more if you like, say about half as much. Do the same process with 1 TSP Crushed Red Pepper, although use your own discretion depending on the level of heat you like. While this aromatic concoction is simmering, open the two cans of diced tomatoes. Now pay attention, drain the juice from the can into the pan, and keep the tomatoes aside for now. The more you can drain out, the better.Kick the heat up to get the mixture to a good perky boil and keep stirring for the next 3-5 minutes. It will start off looking watery, then thicken up a bit as it cooks-off. Now add in the drained tomatoes from the opened cans and continue to cook for until little bubbles return. They're back? Presto! Add in the 2 cans of Tomato Sauce and stir. And stir... keep stirring. now look for those little bubble once again, but as soon as they show up, turn the heat way back down to LOW, or "1" or what ever next to "off" looks like on your stove.Ummm.... you could ring the dinner bell at this point, that is if you had put the water on to boil at the same time that you started making this incredibly hearty sauce!
